I've eaten a lot of different grains -- this one is hands down my favorite. Doesn't taste like quinoa (which has a mild bitter/soapy taste), but instead really does have a slightly nutty taste. So far, I've made veggie burgers with the cooked grains, had amaranth as a side-dish to beans, and plan on adding to soup next. Very tasty and filling!
